½ teaspoon cream of tartar

1 teaspoon vanilla extract

¾ cup powdered SugarShy Allulose

1 teaspoon cornflour

1 teaspoon white vinegar

A small pinch of salt

For the topping

250 ml thickened cream

1 teaspoon powdered SugarShy Allulose, optional

½ teaspoon vanilla extract

Fresh strawberries, raspberries or blueberries

3 to 4 tablespoons SugarShy Strawberry Spread

Mint leaves, optional

How to Make Sugar-Free Keto Pavlova

1. Prepare the oven

Preheat your oven to 120°C fan-forced. Line a baking tray with baking paper.

Draw a circle approximately 18 cm wide on the underside of the baking paper.

2. Whip the egg whites

Place the egg whites and cream of tartar in a clean, dry mixing bowl.

Whip on medium speed until soft peaks form. Add the vanilla extract and continue mixing.

Gradually add the powdered SugarShy Allulose, one spoonful at a time. Continue beating until the mixture looks glossy and holds firm peaks.

3. Add the dry ingredients

Sift the cornflour and salt over the meringue mixture.

Add the vinegar and gently fold everything together with a spatula.

4. Shape the pavlova

Spoon the mixture onto the prepared baking paper and shape it into a round pavlova.

Create a shallow dip in the centre for the whipped cream and berries.

5. Bake slowly

Place the pavlova in the oven and immediately reduce the temperature to 110°C.

Bake for approximately 75 to 90 minutes. The outside should feel dry and firm, while the centre should remain soft.

Turn off the oven and leave the pavlova inside with the door slightly open. Allow it to cool completely.

How to Prepare the Topping

Pour the thickened cream into a clean bowl.

Whip until soft peaks form. Add the vanilla extract and powdered SugarShy Allulose if desired.

How to Assemble the Pavlova

Place the cooled pavlova on a serving plate.

Spoon the whipped cream into the centre and spread it gently towards the edges.

Add fresh berries, then drizzle over SugarShy Strawberry Spread.

Tips for the Best Sugar-Free Pavlova

Use room-temperature egg whites for better volume.

Keep the mixing bowl completely clean. Even a small amount of oil or egg yolk can stop the egg whites from whipping properly.

Do not open the oven while baking. Sudden temperature changes can cause the pavlova to collapse.

Cool the pavlova slowly in the switched-off oven.

Add the topping just before serving so the meringue stays crisp.

Can You Make Pavlova Ahead of Time?

Yes. The baked pavlova can be prepared one day in advance.

Store it at room temperature in an airtight container. Add the cream, berries and SugarShy Strawberry Spread shortly before serving.

Frequently Asked Questions

Is this pavlova completely sugar-free?

This recipe contains no added table sugar. Always check the nutrition information of each ingredient you use.

Can I use frozen berries?

Yes. Thaw them first and drain excess liquid before adding them to the pavlova.

Why did my pavlova crack?

Small cracks are normal. They can happen because of temperature changes. The cream and berries will cover most cracks.

Can I use another SugarShy spread?

Yes. SugarShy Raspberry Spread or SugarShy Apricot Spread would also work well.

A Light Dessert for Any Occasion

This sugar-free keto pavlova combines a crisp meringue shell, a soft centre, whipped cream and fresh berries in one simple dessert.
