White Chocolate Hazelnut Cookies – No Added Sugar
Looking for a cookie that is simple, nutty and not overly sweet? These white chocolate hazelnut cookies are soft in the centre, lightly crisp around the edges, and easy to make at home.
They’re made with SugarShy White Chocolate Hazelnut Spread and no added sugar, making them a lovely afternoon treat with coffee or tea. The creamy hazelnut flavour does most of the work, so the recipe stays simple.
Ingredients
d1 egg
⅓ cup SugarShy Allulose
1 teaspoon vanilla extract
½ teaspoon baking soda
A small pinch of salt
If your almond butter has separated, stir it well before measuring.
How to Make Almond Butter Cookies
Preheat your oven to 175°C and line a baking tray with baking paper.
Add the almond butter, egg, allulose and vanilla extract to a bowl. Stir until the mixture looks smooth and glossy.
Add the baking soda and salt, then mix again until everything is evenly combined. The dough will be soft and slightly sticky.
Leave the dough to rest for 5 minutes. This gives the allulose a little time to dissolve and makes the cookies easier to shape.
Scoop out small portions of dough and roll them into balls. Place them on the tray, leaving space between each one.
Press each ball gently with the back of a fork to flatten it slightly.
Bake and Cool

Bake the cookies for 10–12 minutes, or until the edges are lightly golden. They may still feel soft in the middle when you take them out, so try not to overbake them.
Let the cookies cool on the tray for 10 minutes, then carefully transfer them to a cooling rack. They will become firmer as they cool while keeping a soft, nutty centre.
Storage
Store the cookies in an airtight container at room temperature for up to 4 days.
For a firmer texture, keep them in the fridge and let them sit at room temperature for a few minutes before serving.
